It is not just the glaciers that are melting in Switzerland. Dated mindsets are, too. There is a push to organic farming as a means of greater vineyard expression, a healthy embrace of truly natural wines, and a significant swing to women taking over family domains. With these baselines are established, Laura Paccot says, “The challenge for our generation is in the cellar. To learn to work without adding anything, but to retain control so we keep the pleasure and signature of where the wine comes from.” The Paccot family seem ideally suited to hit this mark of precision, discretion, and respect for both both tradition and the future.

Domaine La Colombe 2016 Brez (Chasselas)

This site has more limestone and the wine shows it. It is more wound up than the Petit Clos and it doesn't show any of the paraffin notes. Instead there is lime citrus, green peppercorns and spice. Time in the glass does make it more generous, but it remains the more linear of the two Chasselas offerings we represent from La Colombe, as 1/3 of the cuvée does not undergo malolactic fermentation.
