With these baselines are established, Laura Paccot says, “The challenge for our generation is in the cellar. To learn to work without adding anything, but to retain control so we keep the pleasure and signature of where the wine comes from.” The Paccot family seem ideally suited to hit this mark of precision, discretion, and respect for both both tradition and the future.

Domaine La Colombe 2016 Petit Clos (Chasselas)

This is the first wine that Raymond will pour for you when you taste with him, but in fact he makes many bottlings of Chasselas. This one comes from clay and limestone soils, 500 meters above sea level, and it is the most "open" of the range. In 2016 this wine was aged in both stainless steel and neutral barrique to preserve both freshness and structure. Musk melon, paraffin and cayenne are present, but there is a pithy grapefruit citrus note on the palate as well.
