This pinot noir comes from Raymond’s sites in Féchy and Mont-sur-Rolle with a minimum vine age of 20 years. The soils here are all clay with limestone. Raymond’s philosophy is to use more whole cluster with riper vintages, and this 2016 was 30% whole cluster. Alcoholic fermentation was in stainless and then it was pressed and moved to 30% used barrique. Sulphur is only added during the maceration period to extract more color. The result is a delicate pinot noir that shows it’s clay and limestone soil: fruity, minerally, plush, lacey and long.
