With these baselines are established, Laura Paccot says, “The challenge for our generation is in the cellar. Domaine La Colombe 2016 Pinot Noir "Vaud"

This pinot noir comes from Raymond’s sites in Féchy and Mont-sur-Rolle with a minimum vine age of 20 years. The soils here are all clay with limestone. Raymond’s philosophy is to use more whole cluster with riper vintages, and this 2016 was 30% whole cluster. Alcoholic fermentation was in stainless and then it was pressed and moved to 30% used barrique. Sulphur is only added during the maceration period to extract more color. The result is a delicate pinot noir that shows it’s clay and limestone soil: fruity, minerally, plush, lacey and long.
