With these baselines are established, Laura Paccot says, “The challenge for our generation is in the cellar. To learn to work without adding anything, but to retain control so we keep the pleasure and signature of where the wine comes from.” The Paccot family seem ideally suited to hit this mark of precision, discretion, and respect for both both tradition and the future.

Domaine La Colombe 2017 Pinot Noir "Vaud"

This pinot noir comes from Raymond’s sites in Féchy and Mont-sur-Rolle with a minimum vine age of 20 years. The soils here are all clay with limestone. Raymond’s philosophy is to use more whole cluster with riper vintages—2017 was 70% . Alcoholic fermentation occurred in stainless where it was then pressed and moved to 30% used barrique. Sulphur is only added during the maceration period to extract more color. The result is a delicate pinot noir that shows it’s clay and limestone soil: fruity, minerally, plush, lacey and long.
