Falkenstein 2016 Pinot Noir (Blauburgunder)
Pinot noir grown here has compact grape clusters with small berries. Following hand harvest in mid-September, the grapes are left in large oak vats for three to four weeks, during which time they are continuously mixed and macerated by hand. After this, the wine is transferred to French oak barrique (only 10-15% new), where the wine completes malolactic and remains on the lees for 12 months. Following the barrel aging the wine is racked to stainless steel for approx. 7 months before being bottled. Once bottled, the wine sees another year in cellar to develop its characteristic elegance.
