The Pratzners have planted Riesling at a density of 9,000-13,000 vines per hectare in the their highest elevation sites, where riesling develops unmistakable aromas. Hand harvest is extremely selective and typically occurs during the first half of October. Afterwards, grapes are processed delicately and transferred to large acacia casks to start fermentation. Here they remain for 10 months. After bottling, the wine is cellared for a further 12 months.
