With these baselines are established, Laura Paccot says, “The challenge for our generation is in the cellar. To learn to work without adding anything, but to retain control so we keep the pleasure and signature of where the wine comes from.” The Paccot family seem ideally suited to hit this mark of precision, discretion, and respect for both both tradition and the future.

Domaine La Colombe 2017 Féchy (Chasselas)

Féchy marks the home village of the Domaine La Colombe and is where most of the vineyard holdings lie. This is a village wine selected from 30+ year old vines grown in several of Colombe’s Chasselas vineyards in Féchy, on soils of limestone, gravel and silt. After a slow press cycle this wine’s native yeast ferment occurs in cool stainless steel. After which, the wine is aged an additional 9 months on its lees in stainless steel.
