Sponti is a spontaneous cuvee – a cross-regional representation of New York State terroir, with a blend that changes a bit each year in accordance with apple agriculture and a growing defining of our local terroir. Sponti’s blend is always based on Northern Spy (55% in 2017) and native NE heirloom apples (23% Goldrush, 12% Baldwin, 5% Wickson, 5% Manchurian Crab). The 2017 vintage is focused on northern New York terroirs, drawing fruit from 2 orchards in the Finger Lakes and Lake Ontario regions. Apples for this cuvée were sweat for 2 weeks, followed with 50% macerated ~18 hours prior to pressing. Native fermentations lasted between 4 and 18 weeks, ciders were then aged on the gross lees for 2-4 weeks before being racked to fine lees. 80% aged sur lie in stainless, 20% sur lie in neutral oak barrique until bottling in June of 2018. Bottled by traditional method without disgorgement. No fining or filtration. Sulfured only once at racking, in accordance with pH, at ~30ppm.
