Branchwater Farms is an integrated, multiuse farm in the heart of Hudson Valley, NY where Robin Touchet and Kevin Pike grow heritage grains for the purpose of distillation by way of organic and regenerative agriculture. They mill their own grain batch by batch, and never let the grist sit for more than 30 minutes before being transferred to the mash tun – to prevent oxidation and give the fermentation fruitiness. Fermentations are temperature controlled to preserve freshness and aromas and distilled as soon as they are complete using two 330L copper pot stills designed by Austrian master distiller, Hans Reisetbauer.

Branchwater Branchwater Rye Whiskey

Rye Whiskey is the focus of our brown spirits production here at Branchwater. We love to grow it and we love to drink it! We grow Danko rye, which is a hybrid that originated in Poland. Most rye as smaller seeds and a higher bran to starch ratio. Danko was developed to have larger seeds and a higher starch content, making it ideal for distilling. It is also a wild child - unlike well behaved wheat, fermentations tend to be redcutive and if you're not careful when distilling, it can bubble up into the helmets, so our rye distillations are smaller batches so we can have more control.

Our rye is distilled to over 160 proof, then watered down to 70% and aged in new American oak barrels for a minimum of 24 months. It was chill filtered and bottled at 50% ABV.
