Leif Sundström runs one of the country’s most forward-thinking cideries, focused on varietal typicity, terroir, promotion of improved variety selection in the orchard, progressive orchard practices, and minimalist cellar work. Working with sustainably grown, heirloom apple varieties from historical cider-producing regions around New York State, he makes small quantities of dry, vinous ciders. They are complex, textural, acid-driven, and meant to age and evolve in bottle. Leif’s work is animated by his search for “the impacts of terroir and agriculture on cider’s ultimate potential.”

There are numerous Ben Davis’ in history that have laid claim to the “original” Ben Davis apple; each claiming a chance-seedling with origins ranging as wide as Kentucky to Maine, and from 1799 to as late as 1840. The apple was planted so wide and fast during the 19th century that its original grafts were likely lost in short order; and so, the modern day Ben Davis remains an orphan cultivar of unknown origin. The cider is round with pit fruit and savory tea-like accents, and finishes with the most structure of the bunch, with suggestions of subtle tannin.

Cider/Cider is a bottle for any and every occasion. It’s light enough to accompany brunch, refreshing enough to pound on a hot day, elegant enough to start a special meal, and versatile enough to study alone. Fermentation takes place in stainless steel, with brief aging on its lees before bottling without fining or filtration. The varieties showcased in Cider/Cider each year highlight the native US varieties, once celebrated but becoming increasingly rare, which mark the beginnings of quality for cider production amongst the region's various heirloom cultivars.
