Cyrille & Sylvain Paquereau are part of a new movement in the Pays Nantais that is reviving a true understanding of both their variety, melon de bourgogne, and the precise set of soils in which it thrives. They represent the fifth generation of their family to work this 16th-century estate, in the heart of Clisson. Conversion to organics and concentration on the precise match of grape to terroir distinguish their tenure. The range at Domaine de l’Epinay focuses on melon’s terroir transparency, aided by spontaneous fermentations, minimal added sulphites, and up to 36 months lees aging in underground cement tanks.

Grapes for “Esprit” are grown from 40 years old vines on more granitic bedrock, with gravel-silt topsoil. But, melon comes to ripeness much earlier here, so these plots are often picked from the first week of harvest. This cuvée tends to go through malolactic conversion, whereas the “Selection” and Clisson do not. This combined with the soil composition produce a more densely mineral focused expression. Muscadet wines at the domaine are treated traditionally, fermented with native yeasts in underground concrete vats. “Esprit” typically ages in concrete an additional 7 months sur lie prior to bottling.
