Domaine La Colombe 2018 Gamay "Vaud"
Colombe sources their gamay from vines averaging 35 years in age from several of their vineyards on a mixture of clay and limestone soils. Traditionally this wine is 60% whole cluster and fermented by native yeast in both stainless and oak cask. Traditional pigeage is practiced during the middle part of the 20 day maceration, the wine is then racked and malolactic is finished in stainless and neutral oak barrel.
