The Phénomène is technically a pure Muscadet from Ollivier-Cottenceau, 8th generation wine grower in the Clisson and Château Thébaud Crus Communaux. Of course, due to the absence of alcohol, it cannot legally be named as a Muscadet, but between us we know that this is a wine from that specific origin. The wine spends a minimum of 6 months of lees aging in stainless before a trip to the Rheingau in Germany (where vacuum distillation was invented) for gentle low temperature vacuum distillation.
The relatively lower acidity of Melon de Bourgogne allows the Phénomene to be finished with significantly less balancing residual sugar than is typical for many other non-alcoholic wines. In fact, we have less than 13 calories per 120ml serving in this case.
