Fabrice is dedicated to the vitality, energy and health of his vineyards. In 2003, he began the work of conversion to organic viticulture and today he incorporates biodynamic principles into his work including compost management, spraying herbal “teas” and applying 500 and 501 treatments. He currently uses only organic compounds for fertilizer, pheromone confusion to ward off pests, cover crops to restore nutrients in the soil and plows alternating rows. He is also a member of Lutte Raisonnée. These are wines that are light on their feet yet possess depth and intensity that unfold with each sip.

R. Pouillon & fils 2017 "Le Montgruguet" Extra-Brut

The greater Montgruguet hill is home to some of the most celebrated lieux dits in Mareuil-sur-Aÿ, including Selosse’s Sous le Mont and the famed Clos des Goisses. Pouillon’s "Le Montgruguet" comes from the hilltop above Les Goisses, near the Notre Dame du Gruguet, where all topsoil has eroded away leaving a pure chalk island along the banks of the Marne. This cuvée is a blend of 100% pinot noir from two microparcels on this hilltop: La Croix Blanche and Varille. Future vintages will include lieux dits Marolles and Sente des Demoiselles.
