von Hövel 2015 Saar Riesling Kabinett (Certified Kosher)
We were excited to hear of this project in 2015 and it has taken three years to finally get the wine to the US. Max seems to never rest, and he is one of the most generous persons in the wine business. He set out to make a fully certified Kosher wine of high quality and this is one of his best ideas. From the great 2015 vintage, Max harvested perfect grapes that needed as minimal intervention as possible. Why? To reach this level of certification, Max is not allowed to oversee the winemaking process. He can only offer the best fruit he can (this is 100% Hütte), write out instructions and then leave the cellar as the rabbis do the work. Max and his cellar master, Christian, told me that they sat in the tasting room above the cellar drinking wines as they anxiously waited for the work to be done. Each tank is sealed off and cannot be touched. Would it be a sweet Kabinett or a feinherb? No one could know until the rabbis came back to finish their work. The result is a scintillating riesling showing Saar minerality and freshness. Greengage, white grapefruit, mint and wintergreen. The palate is for all purposes “dry” with 5 grams/L residual sugar, so the “Kabinett” prädikat is bit misleading. It’s a firm riesling with class and charm. We are honored to import it and to support Max in this project. It is certified Kosher by Gefen Hashalom.
