Leif Sundström runs one of the country’s most forward-thinking cideries, focused on varietal typicity, terroir, promotion of improved variety selection in the orchard, progressive orchard practices, and minimalist cellar work. Working with sustainably grown, heirloom apple varieties from historical cider-producing regions around New York State, he makes small quantities of dry, vinous ciders. They are complex, textural, acid-driven, and meant to age and evolve in bottle. Leif’s work is animated by his search for “the impacts of terroir and agriculture on cider’s ultimate potential.”

Sundström Cider 2018 Liminal

This year’s edition of Liminal is one that was allowed significantly more time than years before, released after 12 months of elevage and another 9 in the bottle. Geneva Tremlett’s & Golden Russet co-macerated for ~24 hrs prior to a 36-day fermentation and spontaneous ML conversion in stainless steel before racking to neutral 500 liter Hungarian oak barrels. Battonage practices were minimized and elevage extended for this vintage, to better stabilize and naturally fine the cider. After 6 months in barrel, the cider rested another 6 months in stainless before bottling. The results are as harmonious as a cider can get, with aroma is at once fruity, floral and feral; while the flavors become savory and full of dark mineral that grow with ripe fruit on the finish. Bottled in December 2019, released without disgorgement - beware of sediment.
