Mitja Sirk 2018 Bianco IGT

This wine is sourced from a single vineyard on the Lonzano hill. The hill runs from North to South, with the Eastern slope more heavily planted. Mitja's vineyard also face East, with vines planted in the early nineties on the stony “ponca” soils of compacted sandstone and marl. The wine’s alcoholic fermentation begins in steel tanks, with a simple cold removal of the lees. The wine is aged an additional 6-7 months with light lees stirring for the first 4-5 weeks of elevage. Malolactic conversion is allowed to occur naturally and doesn’t always fully complete; the wine is bottled after a very light filtration and very minimal sulfur addition. What remains is the idea of a wine that is easily drinkable, while presenting a strong aromatic character combined with a sharp and clean ending.
