Pascal Doquet "Diapason" Le Mesnil-sur-Oger Brut
Pascal's grandfather consolidated to 1 hectare in which Pascal still owns 60 acres of, including “Les Migraines” where he has very old vines planted in 1929. This is 75% 2007, 25% reserve wine. 80% was fermented in enamel, 20% in neutral barrel and it was bottled in April, 2008 (disgorged Summer, 2017) with 5 grams dosage MCR. It’s an impressive non-vintage Champagne and is available anywhere. There are aromas of ginger, anise, zest and sandalwood, and the Champagne emphasizes the spicy characteristics of Le Mesnil—certainly the predominance of 2007 also leans this way, but Pascal harvested nearly three weeks later than his neighbors in 2007 (middle of September) and this adds richness and body to the mid-palate. The wine finishes with some cut which helps focus the finish.
