Pascal Doquet "Champ d`Alouettes" Extra-Brut 2004
The Champ d'Alouettes lieu-dit sits mid-slope in the heart of Le Mesnil-sur-Oger. Pascal's holding here is old-vine and generational. His grandfather consolidated nearly a hectare in this plot, and Pascal now farms roughly 60 percent of it. To preserve the tension Le Mesnil is known for, Pascal ferments about half the wine in neutral barrel and blocks malolactic entirely, then rests it long on the lees. The result gains a fine patina of complexity without ever softening its racy, mineral core. 2004 is the first vintage of this wine, and the first vintage of Pascal’s eponymous domaine after breaking out from his family domaine, where he worked for years.
